Mycelium is amazing stuff. I wrote a newsletter article about it recently and while I was doing a bit of research I was repeatedly amazed by the massive variety of things that we can make from it. Everything from leather to bricks and panels for building construction, and it can also be grown into a burger or steak of vegan protein.
